The harvest date, the region it was produced in, and the varieties used to make it are the most important factors. I would also add that it should be packaged in a dark-tinted bottle that won’t allow light in, which can spoil the oil.

The true test of the quality of the olive oil, of course, is in the taste and smell. If it’s flavorless and boring, it doesn’t really matter what the bottle looks like. I like to try a spoonful of the oil before I decide if it will make the cut. I look for a strong young olive scent, like I just cracked open a fresh olive straight from the tree. From the first sip, I expect a lingering peppery burn in the back of my throat, which lets me know it’s fresh and packed with antioxidants.

Aceites Abril has all of those qualities. It scent is fresh and robust. The peppery burn lingers but doesn’t overwhelm. The taste is mild – slightly nutty with a hint of herb and apple. I got the feeling it would be a great cooking oil, as its flavor was mild, so it wouldn’t overpower the flavor of more delicate foods, and I was absolutely right!

I put it to the test immediate in two separate taste tests — one of my favorite snacks and a recipe that involves using olive oil to poach or confit green olives (I know, olives cooked in olive oil! Double yum!).

As I mentioned earlier, one of my favorite things to eat is tomatoes with olive oil drizzled over the top. This requires the use of only the freshest, best tasting oil. A bold olive oil enhances the acidity and brightness of the tomatoes. Aceites Abril was just peppery and aromatic enough to elevate the tomatoes, without stealing the show, as some more pungent olive oils do.

But how would it hold up as a poaching oil? I had to know, so I loaded a bunch of gorgeous, plump Castelvetrano olives into a sauce pan and poured the Aceites Abril over the top to cover them. On a side note, I love the pouring spout on the bottle. It wasn’t a tediously slow pour, but it didn’t come bursting out of the spout either. It had a flow regulator so I could pour it as slowly or as quickly as I wanted by squeezing the plastic bottle.

It takes about an hour to poach the Castelvetrano olives in the olive oil. When I finally removed them, I was glad to see that the Aceites Abril olive oil held up nicely after all that time. I was able to reuse it for other purposes, rather than having to throw it out. The olives turned out great! (Get the recipe for these citrus and herb marinated olives here!)

    Informative article, actually I was reading the other day about the fake olive oil market thriving .Apparently even “olive pomace” or “light olive oil” marketed for cooking are not authentic. Dark tinted bottles and old fashioned olive oil in cans are the best. Tomatoes with olive oil are one of my favorites too! Great post!!

    Great review of Aceites Abril, it does look like an authentic Spanish Olive Oil. It’s so important to have REAL olive oil and there are times when I don’t taste the olive in an olive oil. Thank you for making us all aware of an authentic brand.

    It is amazing the difference between a good quality oil and a bland (probably fake oil.) I couldn’t agree more – It is worth it to buy the real thing! Greece and Italy also make some lovely olive oils. (There are also some nice ones in Australia, but I don’t think the export much).

    What an informative post, this arguement about which oil is right for what tempretature has been a long standing one, especially in my chef days. I decided years ago that i would do my own research, did oil tastings, cooked and took note of how it changed the composition of the product. I decided that i would always buy local, and not heat it.
